What is Manuka honey?
Manuka (from the native Maori name for the plant in New Zealand) is the name for the Leptospermum scoparium bush that grows only on the islands of New Zealand and in parts of south eastern Australia. The flowers only last for 5-7 weeks therefore timing of honey collection is key. Bees that collect pollen from the Manuka bush, create honey, some of which has exceptional anti-bacterial abilities. Those honeys with this special "non-peroxide actvity" (the natural compound within the honey that gives the honey its bacteria fighting powers) receive the UMF® quality mark.
What is UMF and why does it matter?
UMF is short for Unique Manuka Factor, and is a registered trademark of the Active Manuka Honey Assoc. in New Zealand. Only those honeys that contain anti-bacterial properties (called non-peroxide activity) found in some Manuka honey may bear this designation.
The number that follows the UMF indicates the anti-bacterial strength of the honey. The higher the number the stronger bacteria fighting abilities. For a Manuka honey to bear the UMF seal the minimum antibacterial strength must be rated no less than 5.
What's so special about UMF Manuka honey?
All UMF Manuka honey has been tested for its anti-bacterial qualities. UMF Manuka honey far exceeds regular honey in terms of bacteria fighting strength, and only those honeys bearing the UMF mark have been rigorouly tested using the standard developed over the last 30 years by the University of Waikato's HRU (Honey Research Unit) in New Zealand. UMF® Manuka honey can be used to speed the healing of cuts and abraisions because along with its bacteria killing action it also draws moisture out of the wound to accelerate healing . First of all, what is Manuka right? Manuka honey is a monofloral
(one flower source) honey that is produced by bees that pollinate and visit the
Manuka honey bush that grows in the lush green valleys of both the North and
South islands of New Zealand. The Manuka bush is also present in small areas of Australia, but to a much lesser degree.
So why is the “UMF” Manuka honey so much better than just regular Manuka honey without UMF®?
Well, if you’ve ended up on coralislandmanuka.ca you have probably seen or heard of Manuka honey before and
are interested in trying it out or finding out more. As there is a fairly wide range of Manuka honeys available on the
market most people are starting to see it locally and beginning to purchase it regularly. In Europe and New Zealand UMF®

What sets some Manuka honey apart from its counterparts is its extra bacteria fighting abilities. This “extra” anti-bacterial property, known as “non peroxide activity” (i.e. activity not due to the hydrogen peroxide that is present at very low levels in all honey, but another compound all together)are what set may be given the UMF® (Unique Manuka Factor) mark. UMF® is the original quality mark for Manuka honey with a measurable and significant amount of non-peroxide activity and was developed by Dr Peter Molan in the Honey Research Unit of the Waikato University, New Zealand. It is viewed as the industry standard, and is the only true measure of a honey’s anti-bacterial activity. Before the honey is given the UMF® mark, it is subjected to a stringent set of laboratory tests to establish its level of strength, and given a corresponding number. The higher the UMF® number awarded, the better. A higher UMF® corresponds to a stronger anti-bacterial ability to aid in such things as healing wounds and fighting infections. The minimum score for a honey to achieve the UMF® mark is 5 (the lowest) but some honeys may receive a score of up to 25+ (exceptionally strong anti-bacterial power). At Coralislandmanuka.ca we only sell UMF® honeys and presently stock 15+ UMF Manuka honey, and 18.7+ UMF® Manuka honey, both of which are of a very high anti-bacterial ability.
Recently some companies have tried to establish a similar grading system, with moderate success, largely due, unfortunately, to uneducated buyers purchasing their product(s). You see all honey does possess minimal levels of peroxide that allow it a small amount of anti-bacterial power. The problem arises when normal honey is ingested or comes in contact with moisture (which is typically what happens when honey is used in a wound dressing, for example).

When these circumstances occur the peroxide in regular honey is broken down and rendered in-effective. UMF® Manuka honey, on the other hand, does not lose its “non-peroxide activity”/bacteria killing powers under these same circumstances. The non-peroxide properties remain active and strong even when in contact with moisture, and/or consumed. This is desirable given that UMF® Manuka honey is often ingested as a way to fight sore throats, stomach ulcers and other gastro-intestinal issues or disorders. It is also used extensively by hospitals to fight off MRSA (a powerful “flesh-eating” bacteria) and as a wound dressing to promote healing and fight infection.
Another benefit of UMF Manka honey is what happens to it while its sitting on the shelf. Not only can it be safely stored for years, interestingly UMF® Manuka honey’s activity strengthens over time. In other words the longer you leave it, the better it will become at fighting off bacterial infections.
